Sour sensations – a collab dinner by no. 2 and Nordhavn Vinegar Brewery

”What is sour is dangerous” wrote the late Danish poet Benny Andersen in 1964. At Restaurant no. 2 in Christianshavn we’ll turn his words upside down and showcase how some of Denmark’s finest vinegars can be incorporated in a tasting menu from start to finish. Nordhavn Vinegar Brewery has selected five specimens, which Søren Selin from no.2’s Michelin starred “big brother”, Restaurant AOC, has user to created five dishes celebrating everything from acidic blackcurrants to preserved pine and balsamic plums. The dinner will be executed by the head chef of no. 2, Nicolaj Køster, and served at long communal tables.

A tailored wine menu featuring an aperitif and four glasses can be added

Oysters with kohlrabi and juniper vinegar

Langoustine salad with rosehip vinegar

Pickled mackerel with pine vinegar and green strawberries

Cod with corn, chanterelles and blackcurrant vinegar

Dry aged côte du boeuf with beet root and fermented redcurrant juice

Plum sorbet with malt and balsamic plum vinegar
