We gather for a warm welcome in the beautiful urban garden Nordens Have, where Henrik Jørgensen sets the scene with her passion for local, seasonal ingredients – with onions taking center stage. Guests will explore the garden beds and learn about the cultivation taking place here, including the many varieties of onions grown by both local residents and the Nordens Have community.

Dinner is served! We move into Medborgercentret, where Pernille Vejrum has prepared a delicious meal featuring onions in every form – caramelized, pickled, grilled, and more.

While we dine together, Henrik Jørgensen will give a short, engaging talk about onion farming in Denmark – from cultivation conditions and varieties to market trends and the balance between organic and conventional practices.

Your hosts
Pernille Vejrum is a chef and culinary consultant with the Food Organisation of Denmark. She trained under Per Thøstesen at Bistro Boheme in Copenhagen, where she cooked for 13 years – the last six as head chef.

Henrik Jørgensen is the Sales Manager at Bejo Nordic and has spent over 15 years working professionally with onions. With deep insight into both the Danish and international markets, he has represented Denmark at onion conferences in Europe and South America.

Medborgercentret Nordens Plads is a vibrant local center supporting cultural events, civic engagement, and community-driven activities. It hosts talks, concerts, communal meals, and more – always with an open door and a welcoming atmosphere.

Nordens Have er en grøn oase midt i byen – med fokus på fællesskab, bæredygtighed og socialt engagement. Her dyrkes grøntsager, relationer og grønne drømme.
