Your hosts
Mads Dalsborg is a no-bullshit chef with his hands deep in the local soil and his mind locked on flavor. He’s the force behind the critically acclaimed restaurant Bjørnekælderen, known for turning up the taste and pushing every ingredient to its limit. Seasonal produce is his playground – and when it fits, he’s not shy about throwing in a sharp Asian twist.
Anarkist brews beer with attitude. Packed with hops, fruit, and serious drinkability – it’s the kind of beer that makes Mads Dalsborg’s food hit even harder.
