Come join us for an evening of great food and drinks celebrating local, seasonal produce and beautiful seafood! You'll hear directly from a farmer about the vegetable's journey from soil to plate and get inspired to find creative ways to reduce food waste through a tasting menu that swings between finger food and fine dining with bold flavours and an eye for seasonality. Expect a menu inspired by French, Italian and Danish roots where foraged and fermented flavors give way to comforting bites, relaxed service and good vibes.
Your host
Born on the shore of Brittany between the waves and the fields, Damien learned to cook and developed a deep love for the bounties of both sea and soil. After moving to Denmark to explore Nordic cuisine, fermentation, and foraging, he honed his skills at top restaurants including Syttende and Mielcke & Hurtigkarl.
As part of the Tomorrow's Food Talents program, Damien now shares his personal vision of accessible, sustainable cooking — where flavor meets conscious choices in a relaxed setting.

The menu is pescetarian, with some fully vegetarian dishes. While we cannot accommodate gluten or lactose-free diets at this time, we are happy to adjust for other allergies — as long as we are informed during the ticket purchase.

The menu will remain a surprise — but you can expect 6 courses comprising 8 plates and a few bonus bites to keep things playful. Water, coffee, or tea is included in the ticket price.
