Smørrebrød Day kicks off with a special welcome by brewmaster Michael Rahbek from Nørrebro Bryghus. As the man behind this year’s official festival beer, Michael greets the guests and shares insights on beer’s essential role at the traditional Danish lunch table – and why beer and smørrebrød are a perfect match.

Michael Rahbek is the brewmaster and head brewer at Nørrebro Bryghus. With a passion for craftsmanship, tradition, and quality ingredients, he has been a driving force behind the brewery’s beers since 2003 and is known for enthusiastically sharing his knowledge of beer’s role in food culture.
Birgitte Ruth Witt, a participant in the Morgendagens Madtalenter (Food Talents of Tomorrow) program, will guide us through the history and evolution of the Danish open-faced sandwich, smørrebrød. Birgitte is the founder of Delicious Denmark, where she works to promote Danish food culture to both local and international audiences.
Morgendagens Madtalenter is an accelerator program for young people aged 20–30 who are either in the process of completing or have completed a gastronomic education and dream of opening their own food concept. The project helps them develop their skills, build the right network, and turn their ideas into reality.
