"Less, but Better – Why the Capital Region of Denmark Still Serves Beef"
Since 2019, the Capital Region of Denmark has halved its beef purchases for climate reasons. Beef still plays an important role in the region's kitchens, which serve particularly ill and vulnerable individuals. For the region, it's not just about the climate. It’s also about animal welfare, biodiversity, coherence in the food system, and providing proper nutrition to patients, relatives, and staff.That’s why the Capital Region has just launched a new meat procurement initiative in an effort to influence the food system to produce less, but better. Come and learn about all the nuances and the political balancing act between economics, health, environmental concerns, and biodiversity.
