Chef Nikolaj Juel gives tips and tricks on how to become a pasta master in your own kitchen.
We will work with 2 types of fresh pasta dough and learn to make classic handmade pasta as they do in Italy. We will travel from northern Italy with tagliatelle from the Emilia Romagna region, to a beloved classic throughout the boot country, ravioli, and finally finish in Liguria.
You will also learn about the balance between the pasta and the sauce and finally enjoy the results at a cozy long table dinner.
We will make:
Tagliatelle with mussels, tomato, garlic, chili and broadleaf parsley
Ravioli with pumpkin & ricotta. Served with sage butter & parmesan
Trofie with authentic genovese pesto
