Behind the event is our team of dedicated and skilled nutrition professionals who prepare thoughtful and wholesome meals for Bispebjerg’s patients every day. We cook from scratch using fresh, organic, and seasonal ingredients – often making full use of every part of the produce to reduce waste and care for the environment.
For this year’s Copenhagen Cooking, we invite you into our kitchen for a warm and intimate evening in rarely accessible surroundings – right at the heart of the hospital. Here, you’ll experience how great taste, nourishment, and sustainability come together in the everyday meals we’re proud to serve.

The kitchen team will transform this humble vegetable into a culinary experience out of the ordinary. Look forward to caramelized onions, onion rings dusted with seaweed powder, and a seductive onion panna cotta – all served with creativity, sensory appeal, and deep respect for organic ingredients.
