Challenging the potato: Farming sustainably with Zürich & H15

For this evening you will not only be eating potatoes, but also discover and discuss the challenges farming potatoes.

In a panel discussion with politicians, supermarkets, farmers and consumers we will discover the complex issues of ecological potato farming especially concerning labour and the issues tied immigrant workers and social sustainability.

After the discussion we will move the discussion to the tables and enjoy a delicious meal and more interesting talks.

This event is a collaboration between H15 and talented people from the food industry in Zürich and we look forward to welcoming you in and for us to get wiser on sustainable potato farming together.

Your hosts
H15 Food & Culture is an inclusive and welcoming social space, where individuals can come together, celebrate shared experiences, and cultivate a vibrant sense of community. At H15, you will discover four distinct venues, each possessing its own unique character and allure, a cozy and intimate restaurant offering seasonal dishes, a trendy bar in an industrial-chic setting, a high-end audio room for concerts and a stage for cultural events.

Andi Handke from GastroFutura proprietor of Restaurant Babette in Zurich, is a dedicated advocate of farm-to-table cuisine and responsible gastronomy. Besides running his restaurant, Andi also shares his culinary expertise as a vocational teacher, nurturing aspiring chefs. He actively engages with the Social Gastronomy Movement and co-founded GastroFutura, a Swiss organization that promotes sustainable gastronomy and drives positive change in the culinary industry through connections, collaboration, and transformative efforts.

A part of Zurich meets Copenhagen
Under the headline "Zurich meets Copenhagen," Copenhagen Cooking presents a friendship city for the first time.

"Zurich meets Copenhagen" consists of a series of events at local venues as well as activities at the Festival Square at Israels Plads from August 24th to 27th, where guests can explore gastronomy, art, and culture from the Swiss city.

Potatoes in focus
This year's main name on Copenhagen Cooking 2023 is the potato, and therefore, under the title Kartoffelkram (potato hug), it gets an undisputed leading role in the ambition to make the humble tuber sexy again.

Crispy potatoskins with nordic aioli  

Starter
Hay-smoked "Herbstgold" mountain potatoes served swiss fondue espuma and pickeled and grilled onions

Main
Baked potatoes with coffee grind crust served with romesco sauce made from roasted vegetables and delicious sides 

Dessert
Salted potato caramel and fresh yoghurt sorbet

The meal includes an organic wine menu.
