Welcome aboard this culinary journey between Italy and Denmark, where we aim to present a balanced mix of authentic flavours and innovation, creating a unique combination of products from both countries that elevates a classic pizza to a fine dining level padellino pizza.
Let us introduce ourselves: we are ADfinedining, Aaron and Davide, two Italian chefs who, after years of experience in the restaurant industry, decided to start their own private chef service.
What is Padellino?
Padellino pizza is a concept focused on long fermentation dough with a soft interior and a crispy base finished with a gourmet touch. It is meant to be shared with friends while exploring different flavours.
We chose to combine our Italian roots with the Danish scene by using local produce.
The flour comes from an Italian mill in Piacenza, where the grain is washed before processing, ensuring a cleaner final product. This is the origin of the name UNIQUA—a blend of “unique” and “water.” It is a type 1 flour, rich in wheat germ and blended with barley, with a distinct flavour and aroma.
We use locally sourced products to support small businesses, with attention to sustainability and the inclusion of organic ingredients, such as Danish pea from GartnerHjælpen , coppa Bertel x Museth and Thise Majer Vesterhavsost.
This combination of flavours, together with bears, drinks, and the atmosphere of Kitchen Collective will make your evening memorable.

Menu of the night:
-Midnight coppa padellino:165 kr: 48-hours fermented sourdough pizza with Italian type 1 UNIQUA flour subtly infused with activated charcoal.Finished with San marzano tomato reduction,Organic bertel coppa,Organic aged Vesterhavsost flakes and green mizuna.
-Saffron bloom padellino: 145 kr: 48-hours fermented sourdough pizza with Italian type 1 UNIQUA flour, infused with saffron.Topped with Danish fresh pea cream,roasted yellow & green squash with their blossoms,light Parmigiano fondue and Organic italian lemon zest.
-Nutella Padellino:90 kr: 48-hours fermented sourdough pizza with Italian type 1 UNIQUA flour, subtly infused with activated charcoal. Finished with Nutella, homemade salted pistachio’s ganache and a light dusting of powdered sugar.
Drinks:
We don’t intend to leave you thirsty, so there will be a bar offering a selection of sodas, beers, and wines, along with a signature Amara Tonic, an Italian cocktail with a distinctly summery character.
