4. Grilled halibut, ponzu enoki and slizes of green with mussel foam

5. Braised venison with char siu, cruchy rind and red amaranth

6. Grilled beef filet with burned king trumpet mushroom and blackberry glace, nashi pear & fresh berries

7. Tea hat on cold licorice, toffee crème, dark soil & dried berries
