A special 5-course FIG-CHALLENGE for Rasmus Leck Fischer

A special 5-course fig-dinner at Hideaway Vineyard & Fig Arboretum on the island Fejø. 

- A dinner with tree-ripened figs from Hideaway in all five courses!  This is also why it takes A  CHEF WITH VERY SPECIAL SKILLS to interpret the figs and other island ingredients into a wonderful meal. This chef is none other than RASMUS LECK FISCHER - author of several cookbooks and a huge fan of Fejø island!

The climate on Fejø is almost Mediterranean. Therefore Hideaway's fig collection includes as many as 70 different fig varieties in the Aboretum, all planted in the open air. The menu is therefore based on the figs and we will use them in an all of the courses, which will give you a good introduction to using figs for both sweet and savoury dishes. All 5 dishes are served with wines from Hideaway and some international wines too.

Raw beef ribs with figs, ramsons and fresh cheese

During the dinner, the hostess and owner of the winery, Karin Hvidtfeldt, gives a short guided tour and introduction to viticulture on Fejø and to the winery's special wine style.

About Rasmus Leck Fischer: He has worked for the “truffle king” Chez Bruno in France (1 Michelin star), and at the 3-star Michelin restaurant Martin Berasetegui in Spain, and was for a number of years souschef at Dragsholm Castle restaurant. Now he runs his own kitchen at Gastronomisk Innovation. He has published 3 cookbooks and has a big space in his heart for Fejø island.

About Hideaway Winery - a unique, southern-inspired country house with organic viticulture, fig farming and a very cosy little restaurant.  It is one of Denmark's oldest and largest vineyards with a modern winery, run by Karin Hvidtfeldt with the help of the German oenologist Jens Heinemeyer. Together they make mostly white and rosé wines, where the style is crisp, fresh and very fruity, with a slight residual sweetness.
