Raw, fermented, stewed, pickled, fried, grilled, steamed, boiled, or braised? There are many methods of preparation when the conversation turns to one of the plant kingdom's greatest personalities: cabbage.
The Danes have long looked to the many varieties of cabbage, packed with dietary fiber, when it comes to putting food on the table. Today is no exception as TV chef Adam Aamann, accompanied by Trine Krebs, lovingly treats this versatile vegetable, discussing everything from tiny Brussels sprouts to massive heads of cabbage. Naturally, there will be samples for the audience along the way.

Adam Aamann is a trained chef and former TV host of DR1's Madmagasinet. He is also the owner of Aamanns, which is particularly renowned for revitalizing the classic Danish smørrebrød with a focus on great taste and high quality.
A part of Kål & Ko
The event is part of Kål & Ko, which is part of Copenhagen Cooking's programme both on the festival site and the general programme. Kål & Ko aims to inspire the audience to use dairy in the green kitchen and explore how dairy can contribute lots of flavours and nuances when cooking dishes with vegetables and legumes.
Trine Krebs is the moderator and she invites various chefs and food personalities on stage for 45-minute segments. The chef cooks with a seasonal ingredient, and Trine Krebs and the audience ask, listen and taste the delights from the Kål & Ko stage. You can expect to leave the programme with great tips and tricks for the green kitchen at home.
