The great baking workshop

Presented by Copenhagen Cooking & Food Festival

Get your hands in the dough and learn from the best to bake the ultimate sourdough bread, raised exclusively on wild yeast. From the stage the food missionaries, Rasmus and Marko, from Copenhagen´s Organic Bakery, Jalm&B demonstrate and tell about wild yeast, sourdough, nordic grains and fermentation - and how to get the very right crumb and crisp crust. You get to bring your own dough home, so you can put freshly baked bread on the breakfast table the next day.
During the workshop Jacobsen's brewmasters, who have made this year's festival beer - a special beer brewed on surplus bread will - will join us. They guide you through the phases of beer brewing with a tale of cereals, yeast and fermentation - and finally we will of course taste the special festival beer BRØØL.
 
You must bring a bowl (min. 2 liters), stirrer and an apron (if you have one).
 
Included in the ticket are recipes, ingredients, a Jalm&B bag and a small festival beer (0.2 liter)

Jalm & B is Copenhagen's new bakery with a selection of handmade bread and pastries baked on Nordic organic produce. They have allied themselves with some of the country's most successful ecologists and producers of quality products, including Thise, Herlev Bryghus and Skærtoft Mill. However, the commodities can not do it alone. Good taste takes time. And just the time is the main ingredient in all their recipes. Jalm & B's bakers follow the dough and consistency of the dough until the finished bread, so that all bread enthusiasts can get our daily bread with crisp crust, succulent crumb and rich flavor.
