French tartes with fruits of the season

Come and join food writer and cook book author Marie Holm for a French tartes master class!

What you will learn

“Mastering the art of tarte baking is simple, really.”, Marie says. “Knowing a couple of nice dough recipes, and a few basic fillings you can just about “go tarting” whatever fruits or berries are in season.”

You will learn how to make classic French tartes from two different doughs and with fillings made of fresh, seasonable and organic fruits. Marie will share her tips on how to create your own recipes and which flavour combinations work best.

You’ll learn how to master the perfect French upside-down classic, La Tarte Tatin, made with Danish apples, lots of love and caramel, and a buttery and flaky crust.

You’ll also learn how to bake a beautiful prune and Armagnac tarte made with the best almond shortcrust and a frangipane filling – both are some of those basics you’ll want to keep getting back to in your tart kitchen.

Finally, you will learn to bake the tarte, Marie has baked and served the most during her life: Tarte au citron meringuée. Marie will share her classic take, that can easily be adapted to grapefruit or bergamot/earl grey versions when they’re in season.

“To me a fruit tarte is the perfect ending to basically any fall or winter dinner. It has this warming and homely feeling and at the same time a tarte can be a very exclusive, posh-looking thing to bring to the table. It’s one of those desserts or afternoon treats you make in advance, so if you have people over, you don’t have to run around last minute.”

Marie likes to serve the tarte grandma’ style; just the big beauty on the table and then everybody helps themselves – and other times she prefers to plate a slice of pie and maybe add a scoop of ice cream, Chantilly or creme fraiche.


This course will be taught in Danish and take 3-4 hours.

We will offer you tea and coffee, water and some snacks upon arrival. You will get an apron and be shown your work station. There are max. 12 people in a class.
