Frederiksberg Harvest Feast - Chefs' Manifesto by Kamilla Seidler & friends

Presented by Copenhagen Cooking & Food Festival

We can change the world through gastronomy. This is the attitude of over 100 chefs who have joined the new international initiative: Chefs' Manifesto

The UNs global goals are the starting point, and the ambition is to work for a better future for food and people by focusing om biodiversity, plant-based food, reducing food waste and inspiration for better utilization of raw materials - among other things.

The initiative was launched in Stockholm in June, and now Chefs' Manifesto comes to Copenhagen with Kamilla Seidler in the lead. Kamilla Seidler is a Danish chef who has traveled around the world to inspire change through gastronomy. Among other things she spent 5 years in Bolivia, where she managed to make Gustu one of the world's best restaurants alongside local staff, and she was even named Latin America's best female chef in 2016.

Now, Kamilla Seidler is back home and offers a truly unique experience at Frederiksberg Harvest Feast.

Farmers

In Glænø Kalv & Ko produces organic Jersey veal of very high quality. The production is based on feeding bull calves - they are often considered "leftovers" in milk production. Kalv & Ko buys baby calves from organic dairy producers, including Svanholm Gods, and then the calves are allowed to experience a long summer on grass instead of just being killed. The natural growth gives very good, tasty and more tender organic meat. In addition, the meat is "hanged on the hook" for 12-16 days.

Svanholm is one of the pioneers in the field of ecology, and helped to start the Danish Organic Association in 1981. In 1990, the last crops of Svanholm Gods were converted into organic farming. There are cows and sheep at Svanholm, and in addition, they grow grains, green beans, potatoes, root vegetables and pumpkins as well as having orchards and greenhouses.

The practicalities: • You must bring your plate, cutlery and glass yourself. • It is possible to buy beverages on the day. • You will be sitting at the restaurant you buy the ticket, so be sure to buy tickets for the same restaurant if you want to sit together. • We meet at 17.00 and at 18.00 dinner is served. At 21.00 we say thank you for food and see you again next year. • In case of rain, we have taken care of plan B.

Jalm&B will put delicious Artisan-bread on the table, and Il Fornaio will provide organic olive oil to dip the bread in. Ramlösa will put water on the table for the guests.
