Nicola Fanetti is the co-owner and head chef at Restaurant Brace. Here, he combines the Italian kitchen techniques with Nordic products. He spent his childhood in Northern Italy and has a true passion for his homeland’s gastronomic culture. Nicola Fanetti is already a well-established name in the Danish restaurant world as he has worked in several Michelin-star restaurants.
